Creamy avocado pasta
avocado, cherry tomatoes, pasta
(1 avocado per person)
If you want it less garlicky, add 1 garlic clove per person
fresh basil leaves
You can use fresh too
Salt & pepper to taste

Cook the pasta
In a large pot, bring water to a boil. Add salt.
When the water is boiling, cook your pasta following package instructions. I cooked mine (cavatappi) for 9 minutes.
While the pasta is cooking, prepare the sauce & the veggies
Creamy avocado sauce
Cook the spinach in a pot, when cooked set aside.
In a mixer, add the avocado, the basil leaves, the herbs, the cream and the spinach.
Mix well until you have a creamy texture.
In the same pot you cooked the spinach (because we enjoy not washing a million dishes)
Add the olive oil, when hot, add the minced garlic and cherry tomatoes (cut in halves)
Cook for 5 minutes and set aside.
Drain the pasta, reserve a tiny bit of that pasta water in case the sauce is too thick.
Mix the avocado sauce with the pasta, then add the cherry tomatoes & garlic. Mix everything well.
