15 minute vegan creamy mushroom gnocchi

Ingredients

  • 2 cups mushrooms
  • 1 cup spinach
  • 2 shallots
  • 2 servings gnocchi
  • 1/4 cup veggie broth
  • 1/2 cup shredded cheese vegan
  • 1 cup plant based milk
  • 1 tbsp garlic powder
  • 1 tbsp black pepper
  • 1 tbsp basil
  • Some butter & some flour or cornstarch to thicken the sauce

Instructions

  • In a pan, melt some butter. Add the shallots and cook 2-3 minutes.
  • Add all the mushrooms and cook for 5 minutes.
  • Add the gnocchi and cook at high heat.
  • Add the spices.
  • Add the plant based milk & a bit of broth. Add the spinach.
  • Continue to cook at high heat.
  • If the sauce is too thick, add some cornstarch or flour.
  • Add the cheese and simmer for 5 minutes.
  • Let it rest for a couple of minutes before serving, and enjoy!
