In a pan, melt some butter. Add the shallots and cook 2-3 minutes.
Add all the mushrooms and cook for 5 minutes.
Add the gnocchi and cook at high heat.
Add the spices.
Add the plant based milk & a bit of broth. Add the spinach.
Continue to cook at high heat.
If the sauce is too thick, add some cornstarch or flour.
Add the cheese and simmer for 5 minutes.
Let it rest for a couple of minutes before serving, and enjoy!
