Gnocchi Spinach Casserole

  • 500 gr Gnocchi 18 oz
  • 1 Large onion
  • 2 cups Mushrooms
  • 2 generous handfuls of spinach
  • 1 tbsp Olive oil
  • 2 tbsp Garlic powder
  • 1/2 tbsp paprika
  • Salt & Pepper to taste
  • To serve with: Grated cheese or nutritional yeast,... As you want !


  • Pre-heat a pan and add the olive oil. When hot, add the onion and cook for around 2-3 minutes.
  • Add the mushroom and spices and mix well. Cook for about 10-15 minutes. When the vegetables are starting to golden, set aside in a bowl.
  • Cook the gnocchi according to package instructions. Mine were to cook them in a pan with some olive oil for around 5 minutes until golden.
  • When the gnocchi are golden, add the spinach and the other vegetables (onion and mushrooms) and mix well. Cook for 2 - 3 minutes.
  • Add the tomato sauce and cream. Mix well and cook for an extra 3 minutes.
  • Serve in a bowl with some grated cheese, or some nutritional yeast and enjoy!
