Tortilla de patatas recipe (spanish omelette)

Spanish cuisine has many traditional meals that aren’t inherently vegetarian, like paella. But there are also many things that are vegetarian (I don’t think there are many vegan options, sadly). When you are transitioning to being vegetarian, some of these alternatives always save your ass when you are in restaurants and the only thing you can order is: a tortilla de patatas. What is a tortilla de patatas? Well, it’s an omelette heaven with tons of onions and potatoes.

Ingredients

The ingredient list is as easy as it gets:

  • Potatoes
  • Onions
  • Eggs
  • Olive oil
  • Salt

That’s it. You don’t need more. You are going to need A LOT of the main 4 ingredients (Especially olive oil), but other than that, you are good to go if you have these ingredients.

The pan

This is not necessarily an ingredient but a key component to make a great tortilla. You need a good non-stick pan. If you don’t have a good non-stick pan the paella is going to attach to the bottom and it is going to be a mess. An ugly mess.

The plate

To make the tortilla, you will need to flip it at some point. Try to find a plate that fits well the pan you are using.

How to make a tortilla de patatas

We start cooking the potatoes and onions with a lot of olive oil in a pan. I’m not putting measurements when it comes to olive oil because it really depends on how deep your pan is and how much the potatoes&onions absorbe throughout the cooking. What matters is that they need to be kinda bathing in olive oil. If you see that at some point there isn’t enough, add a bit more. We will cook the potatoes and onions for 10-15 minutes till the potatoes pass the fork test.

Then, in a large bowl, we are going to whisk the eggs and mix in the potato&onion mix.

In the same pan, we pour the mix back in and we cook for 5 minutes. Wiggle the pan every now and then just to be 200% sure the tortilla doesn’t stick to the bottom. When the sides start to brown, you can begin the flipping process.

Flipping the tortilla de patatas

Alright, this is a key step. We mess this up, we end up with scrambled eggs with potatoes and onions (which I have enjoyed many times in the past). Now, we are going to place the plate we have chosen for this task on top of the pan, covering well the edges. Step away from the fire, and we are going to put our palm on the plate, in a very stable position, very firm. Then, we flip the pan. Now the tortilla should be on the plate. Cooked side on the top, bottom uncooked. We wiggle the tortilla back in the pan and we cook the bottom for 5 more minutes.

And once you do that, well you can enjoy the tortilla! We enjoyed ours with a bit of ratatouille (cause yes, I do cook several recipes on the same day) and it was so so good. If flipping the tortilla didn’t stress me so much, I’d do it more often.

Equipment

  • Good non-stick pan
  • Plate that fits the non-stick pan

Ingredients

  • 6 medium sized potatoes peeled and chopped in chunks
  • 2 onions diced
  • 4-6 eggs
  • A very generous amount of olive oil
  • Salt

Instructions

  • Add olive oil to your non-stick pan. When hot, add the chopped potatoes and onion. Cook for 10 minutes at medium heat, stirring every now and then.
  • In the meantime, whisk the eggs in a large bowl and add some salt.
  • When the potatoes and onions are well cooked, add them to the egg mix and mix well.
  • Pour the mixture into the pan and cook for 5 minutes. Now it's time to flip it. Set the pan outside of the fire, place the plate you've chosen on top and turn around the pan and the plate. See the video above if you want to see how I did it.
  • Wiggle back the tortilla in the pan and cook for 5 more minutes.
  • Serve with a side of bread with spreaded tomato on top (pa amb tomàquet), or with a side of veggies (we ate some with ratatouille us). Truly a delicious meal.

Recette en français – Tortilla de patatas

Ingrédients

  • 6 pommes de terre (taille moyenne, coupés en gros morceaux)
  • 2 oignons (en dés)
  • 4-6 œufs
  • Une quantité généreuse d’huile d’olive
  • Sel

Étapes

  • Ajouter de l’huile d’olive dans une poêle non-adhésive. Quand il est chaud, ajouter les pommes de terre et les oignons. Cuire pendant 10 minutes.
  • Pendant ce temps-là, nous allons battre les œufs dans un grand bol.
  • Quand les pommes de terre et oignons sont bien cuites, nous allons les mettre dans le bol avec les œufs.
  • Remettre le mélange dans la poêle et cuire pendant 5 minutes. Maintenant c’est le moment de retourner la tortilla. Nous retirons la poêle du feu, et nous mettons l’assiette de notre choix par dessus de la poêle. Nous mettons notre main sur l’assiette et nous retournons.
  • Nous remettons la tortilla à nouveau dans la poêle et nous cuisinons pendant 5 minutes.
  • Servir avec un peu de pain avec des tomates écrasées ou avec un peu de légumes (ratatouille). Bon appétit !
