Summer vegan appetizers: tofu skewers

It’s summer, it’s bbq time and it is not the time for vegetarians to just eat grilled zucchini (well, you can do it if you want, no judging here). So, because it’s the season, I decided to show you some good summer vegan tofu skewers that are good to eat at home, or in the grill, or honestly, wherever, whenever you want. So here, the recipe !

Ingredients to make this vegan tofu skewers ?

This recipe is a “base” for any other recipe. You can switch the veggies for whatever other veggies you want or have available. A general tip would be to just have veggies that are colorful, try to have some colors that way it’s prettier and as they always say eat the rainbow.

  • Veggies
  • Tofu
  • Sprices to marinate the tofu: oregano, garlic powder, salt & pepper, some olive oil.
  • Some side sauces: ketchup, pesto, mayo,… whatever you want.

Obviously, you’ll also need some skewers.

How to make these vegan tofu skewers?

Press the tofu for thirty minutes at least, then marinate it with the spices for at least 30 minutes.

The only thing that is a bit tedious when making these (if you make them at your place and not a grill) is that you will have to cook each vegetable on its own: zucchini, pepper, tomatoes then the tofu.

Once all the veggies and the tofu are cooked, you can start assembling the skewers.

Ingredients

  • 1 medium zucchini
  • 250 g tofu
  • 8 cherry tomatoes
  • 1/2 yellow pepper
  • 1 tbsp oregano
  • 1 tbsp garlic powder
  • 1 tbsp olive oil
  • Salt & Pepper
  • Some side sauces: ketchup, pesto, mayo, …

Instructions

  • Each skewer will have: 2 pieces of tofu, 2 pieces of yellow pepper, 2 pieces of cherry tomatoes, 2 pieces of zucchini.
  • Cut the veggies knowing you'll need 16 pieces of each.
  • Press and marinate for at least 30 minutes the tofu with the spices: oregano, garlic powder, salt and pepper and olive oil.
  • Cook each veggie in a pan with some olive oil then set aside for assembling.
  • Cook the tofu in a pan and once the tofu is ready you can start assembling the skewers.
  • The order I did was: pepper, tofu, tomato, zucchini, pepper, tofu, zucchini and tomato.
  • I enjoyed my skewers with some pesto & ketchup.

Recette en français – Brochettes de tofu

Ingrédients

Vous aurez besoin de quelques batônnets.

Pour les faire:

  • 1 courgette
  • 250g tofu
  • 8 tomates cerises
  • 1/2 poivron jaune
  • Épices: Origan, semoule d’ail, huile d’olive, sel et poivre.
  • Sauces : ketchup, mayo, pesto, sauce tomate, …

Étapes

  • Chaque brochette aura: 2 pièces de tofu, 2 de tomates, 2 de courgette et 2 de poivron jaune.
  • Couper tous les légumes en petits morceaux, vous aurez besoin de 16 pieces.
  • Presser et mariner le tofu pendant 3 minutes avec les épices et l’huile d’olive.
  • Cuire chaque légume avec un peu d’huile d’olive et laisser de côté. Quand tous les légumes et le tofu sont cuits, commencer à assembler les brochettes: poivron, tofu, tomates, courgette, poivron, tofu, courgette et tomates.
  • Nous avons dégusté les brochettes avec un peu de pesto et ketchup.
